Does anyone have experience swapping or installing the jaws made by one manufacturer into a vise made by another? Can this be done? I have a vise that locks by a set screw and would prefer a cam-locking system. Any advice out there?

Not sure what you mean. I've mounted Rezetti cam jaws on Norvises but it's strictly a custom job. what jaw and what vise?

BTW - if you're getting rid of a Renzetti screw type jaw I'll make you an offer

It's an E-Z Rotary Vise. Hook and Hackle sells it. Here's the webpage with a picture of the vise:

http://www.hookhack.com/vises.html

You should be able to see, more or less, how the jaws are attached to the arm. You can see that there is a screw/bolt that holds the jaws inside of the C-shaped slot at the end of the arm.

Incidentally, the arm on my vise is curved, while the one in the picture has a hard angle. Outside of that, the one in the picture and the one I own are pretty much identical.

I assume you're looking at a renzetti cam jaw. It's just a matter of how close thay are too the same dimensions. It looks very similar. If you have access to a vernier or dail caliper measure the dimensions of the jaws on your vise and I'll tell you how close they are to renzetti dimensions. After that you need the new jaw in hand and just file or shim to fit unless you have access to a milling machine.
