All fish served raw in the US must be frozen to kill parasites. That's an FDA rule but enforcement is left up to your local health department.

My question is how do you "farm" an anadromous fish? The thing that makes a steelhead a steelhead is it's life history. If it's farmed it is by definition not a steelhead. No?

The Colville tribe sells the net pen raised triploids to market as "farm raised Columbia River Steelhead"

Currently, 'steelhead' means a lot of different things to different people. It could be trout. It could be fish from the penninsula. Crappy precedent to be setting though, demand for dead steelhead means bad things for steelhead.
