I'm a rookie baker, but I have to say, I made my first hucklberry (blue) pie this last weekend. Needless to say, it's all gone! Dang, it was good! The simple receipe: Pick 4 cups of huckleberries first! Don't be lazy! 4 cups of huckleberries will easily fill a 9" pie--- pour into shell of pie. Mix 3/4 cup of sugar and 1 tablespoon of flour--sprinkle onto pie berries. (I think I ended up with only putting 1/2 cup sugar) Sprinkle 2 tablespoons of lemon juice over berries. Sprinkle 1 tablespoon of lemon peal (or lemon zest). Dot 2 tablespoons of butter over berries. Cover with crust. Brush inner crust with a little cream (I used half & half). Sprinkle crust with a couple tablespoons of sugar. Bake at 425 for 15 minutes, reduce heat to 350 for about 20 minutes. BINGO!!! It was so dang good!
