They are planktonic filter feeders, sort of like a freshwater whale shark. I'd be interested to know how they taste also since they are related to sturgeon but don't have the turd slurping feeding habits.
the cavier is what makes them keepers. too f'ing bad. they snag 'em for the eggs. I was born and raised in MT and have not ever heard of anyone who has eaten one. paddle fish predate sturgeon-the prehistoric mfers.
Yeah, we eat them. They taste alot like pork. No bones, only catalidge. Really good grilled with a pepper. Also good fried....as is all fish. Cavier is very hard to do and is illegal to sell. They are not kept for that anymore.
