I love carnitas. I judge every mexican restaurant or food truck by their carnitas. If they can't make great carnitas, I won't be back.

A couple of months back, I tried my hand at making carnitas for the first time. I used my sous vide instead of the traditional oil-covered braise.

I can't say that it was the absolute best carnitas, but it was in my top 5.
