Gents; Great to meet all of you who were there, hang out, share some great times, great laughs, great see-gars, and of course, the rain! I was asked to post that enchilada pie recipe, so here 'tis;
a pound or so of ground turkey breast, mild taco seasoning, diced large yellow onion, can of chopped olives, flour tortillas, jack and cheddar cheese, and tomaotes. Brown the meat, throw in the seasoning, onions and olives. Drain. Layer, one tortilla on the bottom, then the meat mix, slices of tomatoes, and alternating jack and cheddar cheese. Fill the dutch oven almost to the top, and bake with coals on both top and bottom until the cheese is bubbly. Pig out.
I"m all cleaned up, dried out, boat washed out and put away, and want to say THANKS to Jerry for the fantastic food! I had a super time, and can't wait for next year!!
